Natalya Legkikh @de_light_kitchen tells how to cook some exotic meal for Valentine’s Day
Do you think this article is about chocolate? No, we will use some chicken liver pate to cook truffles. It seems like quite an ordinary recipe but unusual and fancy serving is exactly what you need for a festive table. The original recipe uses foie gras for cooking truffles. So if you want something really exceptional and can afford it use goose liver instead of chicken. Anyway, your Valentine will be delighted.
- 400 g chicken liver
- 200 g soft cheese
- 2 tablespoons cognac
- 1 tablespoon butter
- 2-3 tablespoons cocoa powder
- 2-3 tablespoons mixed seeds (chia, sesame and flax)
- olive oil, salt and pepper.
Fry the liver with olive oil for about 5 minutes under a fairly high heat, add some cognac, set it on fire (just let the alcohol boil down if you are scared), turn down the heat, add some butter and wait until the liver is cooked.
Mix the liver with cheese in a blender and put it in the fridge. The pate must be absolutely cold so it can be used for shaping truffles later.
Use the pate to shape the balls (your hands must be wet) and smother some part in cocoa and another part in mixed seeds.
