A perfect keto breackfast that looks like a classic morning porridge.
In Russia and Ukraine (and most of ex-USSR countries) they say a porridge or a «kasha» is not a just part of a healthy diet, it’s essential meal. If you can’t open a door (or a bottle of champagne) you can be asked: “Did you eat not enough kasha?”
We use all types of grain for kasha. Fitness and health bloggers know 1 billion recipes of oatmeal porridge. They believe it so healthy and so low in calorie then even create oatmeal crepes and promote it like superfood.
But people on ketodiet or LCHF diet don’t eat grains. It’s high in carb, often contain gluten and don’t contain nothing usefully.
But a kasha as a way of eating, especially for breakfast could be very convenient.
So how to cook LCFH or keto porridge ? Easily!
ALMOND KETO PORRIDGE
- 100 ml heavy whipping cream or coconut cream
- from 20 g to infinity butter
- 60 g almond flour
- 1/3 tsp psyllium husk (you can skip this ingredient)
- 1 egg
- salt, erythritol/stevia – on your choice
- 1 tsp cinnamon – for sweet version
Put cream and butter in a saucepan, add dry ingredients. You can use all butter or left some for serving. I usually use 1 tsp of erythritol, but if you avoid any sweeteners, it’s ok, cream and almond are sweet enough. Or add a pinch of salt or salted butter, the taste will be interesting.
Mix till the mass become smooth. Add an egg, mix quickly and continue before small babbles start to appear.
Serve with butter and cinnamon. Om-nom-nom.
Don’t forget, even it’s high fat, and moderate in carbs, it’s not for everyday. Dairy, even very fat one, and nuts can be a reason of stopping loosing weight on LCHF/keto. Let’s say, this is a perfect weekend breakfast.
What do you usually have for breakfast? What do you think about this kasha option?
