Who does not like “Snickers”? Everybody loves it! But the classic bar is hard to call a healthy choice. So we made a sugar, gluten and all-bad-thing free version.
We like to make things better. Especially sweet things. We already wrote how to cook Raffaello. Now it’s time for Snickers. If your friends and family don’t believe in healthy dessert, this cake will make them change their minds. It’s absolutely totally awesome.
- 300 g roasted peanuts
- 150 g + 8-10 dates
- 200 g coconut manna or cashew paste (sugar free!)
- 7 tbsp cocoa powder
- 15 g cocoa butter
- 2 slices sugar free chocolate
- a pinch of salt
- a pinch of nutmeg
Mix in a blender 150g of dates, salt, nutmeg and 3 tbsp. of cocoa powder. If your blender is not very high-powered, chop dates first. Chop 300 grams of peanuts (pieces should not be too small) and add to the dates mass.
Spread the dough on the bottom of a backing form and put in the refrigerator.
Put a jar with manna or cashew paste to warm water for 10 minutes till it softens. Mix it in blender with 4 tbsp cocoa powder, 8-10 dates and melted cocoa butter (use it a bit more for cashew paste).
Spread the cream over the dates mass, sprinkle with peanuts, lightly salt. Put in freezer for a 3-4 hours. Before serving melt chocolate and decorate the cake.
