Healthy Cookies For a Monster

Your inner monster ask for a cookie? Ok, it will get one! Healthy, delicious and crunchy! Almost paleo and definitely LCHF–dessert without sugar and wheat flour.

It could be considered paleo-cookies, if I wouldn’t have used erythritol as a sweetener. Replace it with sunroot or date syrup or with honey (although I do not cook with it), if you like the concept of a cave man’s nutrition. But these cookies are good for those who likes LCHF-diet – lots of healthy fats and low in carbohydrates.

HEALTY COOKIES FOR A MONSTER

Ingredients:

  • 2 cups almond flour
  • 2 tbsp of coconut flour
  • a pinch baking powder
  • 2-3 tbsp of your favorite sweetener
  • 1/3 cup of butter
  • one drop of vanilla extract
  • 1/3 cup of  peanut butter (unsalted, unsweetened)
  • 1/2 of a bar of chocolate (unsweetened)

STEP 1

Mix together all dry ingredients. Add softened butter and a drop of vanilla. Stir intensively with a fork. Make a boll, wrap it in parchment paper and with words “Hey, guy, just chill!” put into the fridge for an hour. If your inner monster is very impatient, skip this.

STEP 2

Set the oven to 350F/180C. Roll dough between two sheets of parchment paper. If you are an advanced Chef, cut cookies with cutter. If you are like me, any glass will work. Mine was some promo beer glass. Place your cookies on baking sheet. Bake 10 minutes until they are golden brown. Let them completely cool.

STEP 3

Spread peanut butter. You can put cookies to the fridge for an hour or, again just skip this!

STEP 4

Melt chocolate. Put it on cookies. Sorry, monster, this time it better to wait 30 minutes till cookies will freeze.
